Craft A Delicious Dinner For Your Partner, Courtesy of Maison Du Mezze
Giving gifts and treating someone to a night out is a way of showing someone you love them. Valentine’s Day is our spot on the calendar which gives us the opportunity to go out of our way to do something special. We would love for you all to come and try out our carefully curated Valentine’s Menu, but we know sometimes life gets in the way of having a meal out. No worries. We have you covered. We can’t have readers of Maison Du Mezze’s significant other missing out – so we have selected a nice and easy dinner to prepare for your partner that will bring out the Lebanese in you.
We are going to create a perfectly seasoned Chicken and Potatoes as a main and carefully crafted hummus to go on the side. Let’s jump straight into it!
To make your main you will need:
- 4 cut up chicken pieces
- 4 medium potatoes (peeled and quartered)
- Ground white pepper
- 2 cloves of garlic
- ½ cup of extra virgin olive oil
- 1 cup of fresh lemon juice
- Bokharat (optional)
After you’ve popped to the local grocery store to collect your ingredients you’re ready to get started. You’ll probably need somewhere in the range of an hour and a half to complete this recipe, but it’s best to leave some time spare in case of any mistakes if it is your first time.
Begin by preheating your oven to 220 degrees Celsius. While it’s heating up, set up the cut up chicken and potatoes on a large baking dish and begin seasoning with salt and white pepper. At this stage, you could add your own seasonings to give it some personality. Bokharat is a fantastic addition to give it that unique Lebanese taste.
Put that to one side and grab yourself a bowl and begin stirring in the garlic, olive oil, and lemon juice. Proceed to pour this over your seasoned chicken and potatoes. By this point, the oven should be baking-hot. Pop tin foil over the prepared chicken and potatoes and place it in the oven.
After approximately thirty minutes you can take out your tray and remove the foil. Place it back in at a higher temperature (we recommend around 245 degrees) and cook until everything turns a luscious golden brown – which usually takes a further 30 minutes depending on the size of the chicken or potatoes.
You will need the following ingredients. (you could even print this off and use it as a checklist):
- 15 ounces of drained chickpeas
- 3 tablespoons of tahini
- 2 tablespoons of olive oil
- 1 tablespoon of fresh lemon juice
- ¼ cup of water
- 3 cloves of crushed garlic
- ½ teaspoon of ground cumin
- 1 pinch of paprika
- 1 sprig of fresh parsley
Once you have everything organised we can commence our preparation. This recipe will only take 10 minutes, so be sure to have your main near completion. After you have tried it once, play around with the amount of garlic and maybe even add some cayenne or Bokharat (which you can read more about here) to spice up the flavour.
Grab your tin of chickpeas, tahini, olive oil, lemon juice, water, garlic, and cumin and chuck all of it into a food processor. Wait until the mix has settled and become smooth – which usually takes about one minute. Voila. You’re done. All there is to do now is sprinkle some paprika and fresh parsley to taste and you have created your first batch of delicious fresh hummus.
To time it well, you should start making the hummus when you remove the baking tray from the oven the first time (the point when you stripped the chicken and potatoes of the tin foil). That way, the hummus will be ready just before you take the golden roast out the oven. Enjoy Valentine’ Day and have a wonderful evening.
